Ingredients (for a 700 ml fermenting glass):
- 350g red cabbage (seasonal, particularly freshly available in January)
- 1 apple
- 1 small onion (Take a red onion if you want a mild taste)
- 1/2 teaspoon salt
- 1/2 TL caraway (promotes digestion and fits perfectly with red cabbage)
- 1/2 TL fennel seeds (soothing for the stomach)
- 1 tablespoon of vinegar (preferably with vinegar mother and not pasteurized)

Recipe for micro-fermented red cabbage salad
Preparation time: 15 minutes
Micro fermentation time: approx. 4 days
Required accessories: Micro fermentation glass with a membrane and glass weight
Ingredients:
- Finely chop or cut the red cabbage and put it in a bowl.
- Peel, core the apple and cut into small pieces.
- Peel the onion and cut into rings.
- Knead everything together with the salt with clean hands or use a potato stamping horse.
- Press the mixture firmly into a sterilized fermenting glass. Let the edge of the lid distance, as the cabbage extends slightly during fermentation. Fill up to half with lukewarm water.
- The Micro fermentation accelerator Dissolve in a little lukewarm water together with the vinegar and also pour it into the glass.
- Squeeze the cabbage well with the glass fermentation weight again and then fill up with lukewarm water to just below the edge.
