Here is a step-by-step instructions on how you can simply do delicious and probiotic-rich Lassi yourself.

Mango Lassi

Preparation time: 15 minutes
Fermentation time:
10 hours

Ingredients:

  • 1 liter of herbal milk (e.g. soy, almond, or coconut milk)
  • 5 measuring spoon Millivital yogurt starter
  • 1 mature mango (peeled and cut into pieces) or 1 cup of mango puree
  • 1-2 tablespoon of maple syrup (according to taste)
  • ½ teaspoon of ground cardamom
  • A pinch of salt
  • Ice cubes (optional)

Preparation yogurt:

  1. Heat the milk to approx. 90 ° (just before cooking) to sterilize it and let it cool down to less than 40 ° C.
    Tip: If you do not have a kitchen thermometer, the milk prefers to cool down for longer, as the bacterial strains die at temperatures above 40 ° C and the yogurt does not become tight.
  2. Add the Millivital yogurt starter and stir well.
  3. Transfer to the container/ glasses of a heated yogurt guide and ferment for 10 hours or after specifying the manufacturer of the yoghurt rider. If possible, do not move the device during this time. For example, devices from Severin or Rommelsbacher, because you can set pre -defined programs with them, for example for vegan yogurt.
  4. Cool in the fridge for about 2 hours.

Preparation Lassi:

  1. Prepare mango:
    If you use fresh mango, peel it, remove the core and cut it into pieces. Alternatively, you can also use mango puree from the glass.
  2. Mix:
    Put the mango pieces or the mango puree in a mixer. Add ahorn syrup, ground cardamom and a pinch of salt.
  3. Puree:
    Mix everything on a high level until a smooth and creamy consistency is reached. If you like your Lassi colder and refreshing, you can also add a few ice cubes and mix again briefly.
  4. Serve:
    Pour the Lassi into glasses and serve it immediately. You can garnish the Lassi with a pinch of cardamom or some chopped pistachios.

 

Variants
