Winter spices that are more than just joy for the sense of taste

In today's recipe for the apple compote, the three following spices are used, which we therefore want to shed light on you.

Recipe: homemade yogurt with apple compote topping and cardamom-lemon note


1 liter milk, preferably soy milk

5 measuring spoon Millivital Yoghurstarters with living probiotic cultures

4 apples, peeled and cut into small pieces

Date sweet to taste

1/2 teaspoon of cinnamon

A pinch of nutmeg

A pinch of ground cardamom

Shell of a ½ organic lemon


Preparation yogurt:

  1. Heat the milk to approx. 90 ° (just before cooking) to sterilize it and let it cool down to less than 40 ° C.
    Tip: If you do not have a kitchen thermometer, the milk prefers to cool down for longer, as the bacterial strains die at temperatures above 40 ° C and the yogurt does not become tight.
  2. Add 5 measuring spoon Millivital yogurt starter and stir well.
  3. Transfer to the glasses of a heated yogurt pioneer and ferment for 10 hours or after specifying the manufacturer of the yoghurt rider. If possible, do not move the device during this time. For example, devices from Severin or Rommelsbacher, because you can set pre -defined programs with them, for example for vegan yogurt.
  4. Let it ripen in the fridge for about 10 hours. Your homemade probiotic yogurt is ready.


Preparation of apple compote:

  1. For the apple compote the apple pieces, date syrup, cinnamon, nutmeg, cardamom and organic lemon peel simmer in a saucepan until the apples are soft and a creamy consistency is created. Take out the lemon peel after cooking.
  2. Pour the apple compote over the homemade yogurt or layer and be enchanted by the flavors.


By adding the spices and the lemon peel, the apple compote gets an additional level of taste.

Good to know - soy milk and phytoestrogens:

Due to the fermentation process in yoghurt production, phytoestrogens that are contained in soy milk are broken down and neutralized.



  • The longer the yogurt fermented, the more acidic and firmer it becomes.
  • The next time you want to do yogurt, you can use a few spoons of the last self-made yogurt as an approach instead of the yogurt starter powder. However, the yogurt should not be older than 4 days. With a hygienic way of working, this usually works up to 5 times. After that you should use new cultures again.
  • If you want to use a different plant milk, e.g. hemp milk, for your yogurt, pay attention to the highest possible protein content and add about 20 g tapiocast strength into the milk. Even if the yogurt should remain fluid, nothing changes in its good probiotic properties.
